Tortellini Soup

This creamy tortellini soup is a hearty, flavor-packed meal made with tender cheese tortellini, savory Italian sausage, fresh vegetables, and a rich Parmesan cream broth. Ingredients:

  • 4 Tbsp Olive Oil
  • 1 lb Mild Italian Sausage 
  • 1 Yellow Onion
  • 2 Medium Carrots
  • 2 Celery Stalks
  • 6 Garlic Cloves
  • 1 tsp Fennel
  • 6 Oz Tomato Paste
  • 3 Tbsp AP Flour
  • 1 Cup Sauvignon Blanc
  • 8 Cups Chicken Stock
  • 1/4 Cup Grated Parmesan Cheese
  • 1 1/2 Cups Heavy Cream
  • 16 Oz Tortellini Pasta 
  • 1/4 Cup Basil 
  • 1/4 Cup Italian Parsley
  • Salt and Pepper to taste

Directions:

  • Start by washing the vegetables, then peel and dice the onion, carrots, celery and garlic, and crush the fennel in a bag, set aside
  • Chop the basil and parsley and set aside for the end
  • Next add 2 tbsp of oil to a large pot and cook the sausage on medium-high heat until browned and cooked
  • Remove from pot and set aside, then add the onion, carrots and celery, followed by 2 tbsp of olive oil and a pinch of salt
  • Add a dash of chicken stock and scrape the bottom of the pot with a spoon or spatula
  • Add the crushed fennel and cook for 10 minutes, stirring occasionally
  • After 10 minutes add the garlic and cook another minute or 2
  • Add the tomato paste and mix until combined, then cook another 5 minutes
  • Pour another splash of chicken stock and scrape the bottom of the pot to get any bits off
  • Sprinkle in the flour and mix well, then add the wine and let reduce for 1-2 minutes as your stir
  • Next add the chicken stock and bring to a boil, then reduce to a simmer
  • Add the sausage back into the pot along with the parmesan and let it simmer for 10 minutes
  • Slowly pour in the heavy cream as you stir, then let it simmer for another 10 minutes
  • After 10 minutes, add the tortellini pasta and let it cook as long as the package says (should be fairly quick)
  • Last add the chopped basil and parsley
  • Ladle into a bowl, serve and enjoy!
