This creamy tortellini soup is a hearty, flavor-packed meal made with tender cheese tortellini, savory Italian sausage, fresh vegetables, and a rich Parmesan cream broth. Ingredients:
- 4 Tbsp Olive Oil
- 1 lb Mild Italian Sausage
- 1 Yellow Onion
- 2 Medium Carrots
- 2 Celery Stalks
- 6 Garlic Cloves
- 1 tsp Fennel
- 6 Oz Tomato Paste
- 3 Tbsp AP Flour
- 1 Cup Sauvignon Blanc
- 8 Cups Chicken Stock
- 1/4 Cup Grated Parmesan Cheese
- 1 1/2 Cups Heavy Cream
- 16 Oz Tortellini Pasta
- 1/4 Cup Basil
- 1/4 Cup Italian Parsley
- Salt and Pepper to taste
Directions:
- Start by washing the vegetables, then peel and dice the onion, carrots, celery and garlic, and crush the fennel in a bag, set aside
- Chop the basil and parsley and set aside for the end
- Next add 2 tbsp of oil to a large pot and cook the sausage on medium-high heat until browned and cooked
- Remove from pot and set aside, then add the onion, carrots and celery, followed by 2 tbsp of olive oil and a pinch of salt
- Add a dash of chicken stock and scrape the bottom of the pot with a spoon or spatula
- Add the crushed fennel and cook for 10 minutes, stirring occasionally
- After 10 minutes add the garlic and cook another minute or 2
- Add the tomato paste and mix until combined, then cook another 5 minutes
- Pour another splash of chicken stock and scrape the bottom of the pot to get any bits off
- Sprinkle in the flour and mix well, then add the wine and let reduce for 1-2 minutes as your stir
- Next add the chicken stock and bring to a boil, then reduce to a simmer
- Add the sausage back into the pot along with the parmesan and let it simmer for 10 minutes
- Slowly pour in the heavy cream as you stir, then let it simmer for another 10 minutes
- After 10 minutes, add the tortellini pasta and let it cook as long as the package says (should be fairly quick)
- Last add the chopped basil and parsley
- Ladle into a bowl, serve and enjoy!
