  • 2 Rosemary Sprigs
  • 1 Shallot
  • Ciabatta Loaf
  • White American Cheese
  • 1/2 Cup Mayonnaise
  • 1 Tbsp Sriracha
  • Salt and Pepper to taste

Directions:

  • Start by generously seasoning the steak with kosher salt and a light seasoning with pepper, then set aside
  • Peel the onions then slice them all very thin
  • In a large pan over medium-high heat, add 2 tbsp of olive oil and butter, then add the yellow onions and immediately salt
  • Next add in the sugar and cook for about 20-30 minutes stirring occasionally
  • Once the onions start the brown, lower the heat and continue cooking and stirring
  • Cook the onions until they are a deep gold brown color then remove from heat and set aside
  • Heat a cast iron pan over high heat and add the vegetable oil
  • Once the oil begins the smoke, add the strip fat side down and cook for one and a half minutes until golden brown, then sear each side for 2 minutes or until golden brown then remove
  • Lower the heat to medium and add the 4 tbsp of butter, crushed garlic cloves, rosemary sprigs and crushed shallot
  • Then add the strip and use a spoon to baste the steak for 1-2 minutes
  • Immediately remove from heat to rest
  • Cut the ciabatta loaf down the middle so you have a top and bottom bun, then cook the bread face down in the cast iron pan for 2-3 minutes
  • Mix the mayonnaise and sriracha together and heavily lather each face of bread
  • Thinly slice the steak and load it onto the sandwich
  • Next place white american cheese on the steak and toast or broil the sandwich for a few minutes to let the cheese melt
  • Then add the caramelized onions followed by the raw onions and crown your steak sandwich
  • Serve and enjoy! (Optional, garnish with chopped Italian parsley)
