Ingredients:
- 1 lb beef (80% lean 20% fat)
- 8 slices American cheese
- 1 lb bacon
- 1 yellow onion
- 3 cloves garlic
- 3 1/2 cups flour
- 1/2 milk
- 1/3 cup mayo
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup apple cider vinegar
- 1/4 cup coffee
- 3 tbsp sugar
- 2 tbsp worcestershire sauce
- 2 tbsp mustard
- 3 eggs
- 12 pickles
- 1/2 tsp smoked paprika
- 1 dry yeast packed (2 1/4 tsp)
- Garlic powder
- Onion powder
- Black pepper
- Salt
- Butter
Directions:
- Start by making the dough for the buns, in a bowl mix 1/2 of warm milk, 1/4 cup of warm water, 3 tbsp sugar and the yeast packet, whisk together and allow the yeast to bubble for 10 minutes
- In a large bowl mix 3 1/2 cups flour with 1 tsp salt and 2 eggs, then add the yeast mixture until combined
- Add 1 tbsp of room temp butter at a time until smooth, form into a ball, cover and let rest for an hour
- Next season the 1 lb of beef with salt and pepper and form into 8 even balls
- For the bacon jam chop and cook 1 lb of bacon, then, using the bacon grease, cook one chopped yellow onion for 10 minutes, in the last minute add 3 cloves of garlic, diced
- Then add 1/4 cup brown sugar, 1/4 cup maple syrup, 1/4 cup apple cider vinegar, 1/4 cup coffee, 1 1/2 tsp worcestershire sauce, black pepper and smoked paprika, then let simmer for 30 minutes
- After the dough sat for an hour, form in 6 smaller balls and let rest for another hour and set your oven to 375 degrees Fahrenheit
- For the sauce, mince 12 pickles and mix in a bowl with 1/3 cup mayo, 1/4 cup ketchup, 2 tbsp mustard, 1 1/2 tsp worcestershire sauce, 1 tsp garlic powder, 1 tsp onion powder and 1/2 tsp of salt and pepper, mix well
- Bake your buns at 375 for 15 minutes or until golden, then let rest before cutting
- Place the burgers on a griddle with medium heat, and press down with a weight, using wax paper between the weight and burger, the burger should be as flat as possible
- After 2 to 3 minutes or about 80% of the way through then, flip, making sure to keep the crust. Immediately place a piece of cheese on each patty
- After another minute stack the burgers so you have double patties
- Put 1 tbsp of butter in a pan for every bun you cook, so for 6 buns, 6 tbsp of butter, soak the cut side of the buns in the butter and cook on medium low for 3 minutes or until golden brown
- Assemble your smash burger with the heel of the bun, sauce, a double patty, the bacon jam, more sauce and the crown of the bun, give it a press down and enjoy!
