Shrimp Alfredo Pasta

Ingredients:

  • 1 lb Shrimp 
  • 1 lb Fettuccine 
  • 1 Yellow Onion
  • 2 Cloves of Garlic
  • 2 Cups Heavy Cream
  • 1/3 Cup Parmesan grated 
  • 1/3 Cup Chardonnay
  • 1/4 Cup Chopped Parsley
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Paprika

Directions:

  • Peel and wash 1 lb of wild shrimp and pat dry after washing
  • Season shrimp with 1/2 tsp salt, 1/4 tsp pepper and 1/4 tsp paprika
  • Cook shrimp in a pan over medium-high heat for about 2 minutes per side, or until fully cooked through
  • Bring a pot of water to a boil and add salt, then cook 1 lb of fettuccine in salted boiling water until al dente (Otherwise noodles will turn mushy)
  • Dice onion, and 2 cloves of garlic
  • Caramelize the onion and garlic in the pan used to cook shrimp for about 5 minutes
  • Add 1/3 cup of chardonnay and let it reduce by half
  • Add 2 cups of cream and 1/3 cup of parmesan and let simmer
  • Drain the pasta, then immediately add the pasta and shrimp into the sauce and mix
  • Salt and pepper to taste, and top with chopped parsley. Serve and enjoy!
