Ingredients:
- 1 lb Shrimp
- 1 lb Fettuccine
- 1 Yellow Onion
- 2 Cloves of Garlic
- 2 Cups Heavy Cream
- 1/3 Cup Parmesan grated
- 1/3 Cup Chardonnay
- 1/4 Cup Chopped Parsley
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Paprika
Directions:
- Peel and wash 1 lb of wild shrimp and pat dry after washing
- Season shrimp with 1/2 tsp salt, 1/4 tsp pepper and 1/4 tsp paprika
- Cook shrimp in a pan over medium-high heat for about 2 minutes per side, or until fully cooked through
- Bring a pot of water to a boil and add salt, then cook 1 lb of fettuccine in salted boiling water until al dente (Otherwise noodles will turn mushy)
- Dice onion, and 2 cloves of garlic
- Caramelize the onion and garlic in the pan used to cook shrimp for about 5 minutes
- Add 1/3 cup of chardonnay and let it reduce by half
- Add 2 cups of cream and 1/3 cup of parmesan and let simmer
- Drain the pasta, then immediately add the pasta and shrimp into the sauce and mix
- Salt and pepper to taste, and top with chopped parsley. Serve and enjoy!
