Patties

Ingredients:

  • 1 lb 80% Lean 20% Fat Beef
  • 8 thin slices American Cheese
  • 1 White Onion
  • Salt and Pepper to taste

Directions:

  • Season meat (I only use salt and pepper) and mix in a bowl
  • Divide your meat in 8 balls, roughly .125 lbs each
  • Cut an onion as thin as possible (Use a mandoline if you have one)
  • Place burgers on griddle, cover in onion shavings and press down as hard as you can to make them as flat as possible (Use a cast iron press if you have one)
  • When you flip the patties be sure to get under them to keep the crust, they should be about 80% of the way cooked through before you flip
  • Use thin yellow American cheese for the classic look
