One of my favorite cold-weather dishes—a warm, creamy tomato soup that’s cozy, comforting, and packed with flavor. Cook Time: 30 Minutes | Serves: 4-6 | See Full Video Below
Ingredients:
- 1 Yellow Onion
- 1 Cup Celery
- 1 Stick of Butter
- 4 Cups Chicken Stock
- 1/4 Cup Flour
- 2, 28 oz Cans San Marzano Tomatoes
- 1 Cup Heavy Cream
- 1 Tbsp Sugar
- 2 tsp Salt
- Black Pepper
Directions:
- Dice and chop onion and celery, then saute in 1 stick of butter
- Then sprinkle in 1/4 cup of flour and mix
- Next, very slowly, pour in 4 cups of chicken stock (emphasis on slow), you don’t want them to separate
- Add in 2 28 oz cans of San Marzano tomatoes, 1 tbsp sugar, 2 tsp salt and desired black pepper, then blend with a handheld blender
- Add 1 cup of heavy cream
- Ladle in a bowl and add 1 basil leaf or mint leaf (optional) and enjoy!
