Clam Chowder

Homemade clam chowder is a rich, creamy soup that’s packed with tender clams, soft potatoes, and comforting coastal flavor. Slow-simmered into a thick, velvety broth, it’s a classic dish that feels both hearty and indulgent. Perfect for a cozy meal, this chowder is best served hot with crackers or crusty bread.

Ingredients:

  • 1 Yellow Onion
  • 2 Celery Stalks
  • 2 Russet Potatoes
  • 3 Cloves Garlic
  • 4 Slices Bacon
  • 2 Tbsp Butter
  • 1/3 Cup AP Flour
  • 2, 6.5 Oz Cans of Chopped Clams
  • 1 1/2 Cups Chicken Stock
  • 1 1/2 Cups Whole Milk
  • 1 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 Bay Leaf
  • 1 1/2 Cups Half and Half
  • Parsley for Garnish
  • Oyster Crackers for Garnish

Directions:

  • Start by washing all your vegetables, then dice a yellow onion, the celery stalks, and the garlic, put into a bowl and set aside
  • Next peel and cube 2 russet potatoes small enough that you can fit the cubes onto a spoon (They should be small enough to fit into each bite, probably 1/2 inch cubes)
  • Get a large pan and place the bacon in while it’s still cold. Next raise the heat to medium-high and cook until crispy
  • Remove the bacon, set aside and add the butter to the pan but do not remove the bacon grease
  • Then add the onion, celery and garlic and caramelize for 5 minutes until fragrant and slightly browned
  • Next sprinkle and mix the flour into the pan until everything is coated
  • Open both of the chopped clams, and pour into a strainer over the pan so that all the liquid goes into the pan but none of the clams
  • Add in the chicken stock and whole milk, combine and use a spatula to scrape the bacon bits at the bottom of the pan
  • Add in the salt, pepper and bay leaf, then raise the heat so that the liquid is simmering
  • Once it starts bubbling, add in the cubed potatoes and let simmer for 15 minutes to thicken
  • Once thickened, add in the half and half along with the clams and remove the bay leaf
  • Mix well, and serve
  • Top with the chopped bacon from earlier, chopped parsley and oyster crackers for an amazing finish. Enjoy!
