Teriyaki Chicken

Teriyaki chicken with broccoli and rice is a simple, balanced meal that’s packed with sweet and savory flavor. Tender chicken is coated in a glossy homemade teriyaki sauce, then served with steamed broccoli and fluffy rice to soak up every bit of sauce. It’s an easy, satisfying dish that tastes just like your favorite takeout, made right at home.

Ingredients:

  • 4 Boneless and Skinless Chicken Thighs
  • 1/2 Cup Soy Sauce
  • 1/4 Cup Water
  • 1/4 Cup Brown Sugar
  • 2 Tbsp Mirin
  • 1 Tbsp Ginger
  • 2 Cloves Garlic
  • 1 Head of Broccoli
  • 1 Cup Rice
  • 1 Tbsp Corn Starch 
  • 1 tsp Toasted Sesame Seeds
  • 1/4 tsp Red Pepper Flakes
  • 1 Tbsp Green Onion
  • Salt and Pepper to taste

Directions:

  • Mix soy sauce, water, brown sugar, mirin, ginger (grated) and garlic (minced) in a bowl to make the teriyaki sauce, then set aside
  • Season the chicken with salt and pepper, then sear in a pan over medium-high heat for 5 to 6 minutes per side or until golden brown, then remove 
  • Chop off the stem of the broccoli and cut the broccoli into florets by chopping into bite-sized pieces 
  • Steam the broccoli for 15 minutes and while that’s steaming cook 1 cup of rice
  • After the broccoli is done, pour the teriyaki sauce into the same pan and simmer for about 2 to 3 minutes 
  • Add the cornstarch to a small bowl with twice the amount of water (1-2 ratio of cornstarch to cold water) to make a cornstarch slurry
  • Stir the cornstarch slurry into the sauce until it thickens a bit, then add the chicken back in with the red pepper flakes and toasted sesame seeds
  • Plate with rice first then broccoli, then, cover the rice with chicken and pour the teriyaki sauce over everything
  • Garnish with chopped green onions and enjoy!
