Ingredients:
- 1 Bunch Chives
- 1 Russet Potato
- 1 Avocado
- 4 Pieces of Bacon
- 4 Sausage Links
- 3 Eggs
- 3 Tbsp Butter
- 1 Tbsp Creme Fraiche
- 1/2 tsp Garlic Powder
- 1/2 tsp Smoked Paprika
- 2 Tortillas
- 1/2 Cup Shredded Cheddar Cheese
- 2 Tbsp Maple Syrup
- Salt and Pepper to taste
Directions:
- Start by chopping the chives thin
- Then peel and cube the potato into 1/4 inch – 1/2 inch cubes, then place in cold water to release the starch
- Thinly slice the avocado or cube it
- Cut the bacon in half to cook easier in a pan
- If your using a tube of sausage like me, form your links using a knife
- Next add the butter to a pan over medium heat, if you choose to do 4 eggs, match that with 4 tbsp of butter and so on
- Constantly stir the eggs and add the creme fraiche when they start to take shape
- Add in your desired amount of chives then add salt and pepper to taste
- Remove eggs from burner and set aside, then cook the bacon in the same pan
- Once cooked, remove and cook the sausage in the same pan again
- Remove once cooked and then cook the cubed potatoes in the same pan
- Cook about 3-4 minutes per side or until browned
- Add the garlic powder and smoked paprika
- Finally, in a new pan, cook the tortilla and flip once bubbling
- Then add half of cheese, bacon, sausage, hashbrowns and avocado
- Last, add a touch of maple syrup, fold and enjoy!
