This Everything Breakfast Sandwich is the ultimate stacked morning meal, loaded with layers of savory, sweet, and spicy flavors in every bite. Built on a toasted everything bagel and packed with bacon, sausage, ham, eggs, crispy hashbrowns, avocado, and a maple chipotle aioli, it’s a true all-in-one breakfast experience. Ingredients:
- 1 Chipotle Pepper in Adobo Sauce
- 1/4 Cup Mayonnaise
- 1 Tbsp Maple Syrup
- 1/2 tsp Apple Cider Vinegar
- 1/2 tsp Salt
- 2 Pieces Bacon
- Sausage Patty
- 1 Tbsp Chives
- 1 Russet Potato
- 1 Avocado
- 1/2 Cup AP Flour
- 2 tsp Sugar
- 1 tsp Baking Powder
- 1/8 tsp Salt
- 1/2 Cup Milk
- 1/2 Egg
- 1 Tbsp Unsalted Butter
- 1/4 tsp Vanilla Extract
- 1/4 Cup Arugula
- 1 Tbsp Olive Oil
- Salt and Pepper to taste
- 1/2 tsp Lemon Juice
- Honey Butter (Optional)
- 2 Pieces Thin Yellow American Cheese
Cooking Ingredients:
- 4 Tbsp Butter
- 3 Egg
- 1/2 Tbsp Creme Fraiche
- 1/2 Chives
- Salt and Pepper to taste
- 1/2 tsp Garlic Powder
- 1/4 tsp Smoked Paprika
- Everything Bagel
- 1 Piece of Ham
Directions:
- Start by mincing the chipotle pepper and adding 1/2 a tsp of that to a bowl with the mayonnaise, maple syrup, apple cider vinegar and salt, then mix well and set aside
- Next cut your bacon in half so it will fit on the sandwich
- Form your sausage patty or you can also buy one that’s already formed
- Chop the chives thin and set aside
- Peel and cube the potato into 1/2 inch cubes and place into a bowl of cold water to release the starch
- Slice the avocado and set aside
- For the pancake batter, mix the flour, sugar, baking powder and salt in a bowl
- In a separate bowl mix together the milk, egg, melted butter and vanilla
- Add the wet mix to the dry mix and combine with a spatula just until you can’t see the flour, it should be lumpy, then set aside
- In a small bowl mix the arugula, olive oil, lemon juice and salt and pepper to taste, set aside
- Next get out a pan over medium heat and add 1 tbsp butter and 1 egg, then scramble with a spatula
- Continue moving the eggs with a spatula until they take shape, then add the creme fraiche
- Chop the chives and add that to the eggs with a little salt and pepper, then put in a bowl and set aside
- Using the same pan add another tbsp of butter and this time crack two eggs but don’t scramble them
- Cook them until the egg is about 80% cooked (about 2-3 minutes) then flip and cook for another 15-20 seconds and quickly remove, being careful not to break the yolk
- In the same pan add another tbsp of butter and 1/2 of the pancake batter
- Now is the time to add toppings if you desire
- Cook about 2-3 minutes or until browned then flip and cook another minute
- Remove and set aside
- Then cook the bacon, followed by the sausage patty and set both aside
- Remove the cubed potato from the bowl and pat dry (very important for the crust to form)
- Cook the cubed potatoes in the bacon grease and add the garlic powder and smoked paprika
- Cook for 4-5 minutes on one side or until browned then flip and cook another 3-4 minutes
- Set aside, then add the last tbsp of butter followed by the everything bagel cut in half face down until golden brown (about 2-3 minutes)
- Last, cook the piece of ham until lightly browned (2-3 minutes total)
- To assemble the sandwich, start by spreading honey butter on both faces of the bagel followed by the maple chipotle aioli
- Then on one half, place the sausage patty followed by a piece of american cheese, then the scrambled eggs, hashbrowns, bacon, pancake, ham, over easy eggs, avocado, arugula mix and finally another piece of cheese
- Crown you sandwich with the top bagel and cut it in half to reveal the best cross section ever
- Serve and enjoy!
