Beef Stroganoff

Rich, creamy, and loaded with tender beef and mushrooms, homemade beef stroganoff is the ultimate comfort food. Served over warm noodles, it’s a hearty and satisfying meal that never goes out of style.

Ingredients:

  • 1 lb Sirloin Steak
  • 12 Oz Egg Noodles
  • 1/2 lb Brown Mushrooms
  • 1/2 Yellow Onion
  • 2 Garlic Cloves
  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 1 Tbsp AP Flour
  • 1 Cup Beef Broth
  • 3/4 Cup Heavy Cream
  • 1/4 Cup Sour Cream
  • 1 Tbsp Worcestershire Sauce
  • 1/2 tsp Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • Fresh Chives for Garnish

Directions:

  • Start by cutting the steak into thin strips and set aside
  • Wash the mushrooms and thinly slice them, then set aside in a bowl
  • Peel and dice half of a yellow onion and set in a bowl
  • Mince the garlic and set aside separate from the onion
  • Get out a cast iron pan set over medium-high heat and add the olive oil
  • Once the olive oil is hot add the meat in one even layer, you may have to cook in batches
  • Cook the steak for 2-3 minutes per side or until lightly browned then flip and cook for another 2 minutes until browned
  • Remove the steak and set aside, then add the butter, onions and mushrooms and saute them for 6-7 minutes
  • At this time, bring a pot of water to a boil and cook the egg noodles according to the instructions on the package
  • Then add the minced garlic and stir another minute
  • Sprinkle in the flour and stir constantly until it is combined
  • Pour in the beef broth and scrape the bottom of the pan with a spatula to get any stuck bits of the bottom
  • Then slowly pour in the heavy cream as you stir
  • Bring the liquid to a boil then lower to a simmer
  • In a bowl, add the sour cream, then ladle some of the hot soup in the bowl and mix until combined (this is important, if you skip this the sour cream may curdle in the soup)
  • Add the worcestershire sauce, dijon mustard, salt and pepper
  • Once the liquid is bubbling, add the meat back in, using a spoon or spatula to make sure all of the meat is coated in the sauce
  • To plate, add your noodles to a bowl, then pour the sauce, steak and mushrooms over the noodles
  • Finally, chop or cut fresh chives over everything, serve and enjoy!
