Ingredients:
- 2 Heads of Broccoli
- 8 Oz Medium Cheddar Cheese
- 1 Large Carrot
- 1/2 Yellow Onion
- 4 Tbsp Unsalted Butter
- 2 Garlic Cloves
- 4 Tbsp AP Flour
- 2 Cups Chicken Stock
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Paprika
- 2 Cups Half and Half
Directions:
- Start by trimming the stem from the broccoli and cutting the florets into bite-sized pieces
- Next grate the cheddar cheese and set aside in a bowl
- Peel the carrot, cut of the ends and grate it, then set aside
- Peel and dice the onion
- In a pan over medium-high heat add the butter followed by the onions
- Use a garlic press to crush the garlic in the pan and stir until fragrant and translucent
- Sprinkle in the flour and mix until fully combined
- Next pour in the chicken stock, followed by the salt, pepper and paprika
- Bring the soup to a boil, then add the carrots and broccoli, lower to a simmer and cover for 15 minutes
- Remove the lid and slowly pour in the half and half while stirring
- Finally, add the cheese and mix until melted and combined
- Ladle into a bowl, serve and enjoy!
