Broccoli Cheddar Soup

Creamy, cheesy, and filled with tender broccoli, this homemade broccoli cheddar soup is the ultimate comfort food. It’s a simple, satisfying soup that’s perfect for lunch, dinner, or dipping with a warm piece of crusty bread.

Ingredients:

  • 2 Heads of Broccoli
  • 8 Oz Medium Cheddar Cheese
  • 1 Large Carrot
  • 1/2 Yellow Onion
  • 4 Tbsp Unsalted Butter
  • 2 Garlic Cloves
  • 4 Tbsp AP Flour
  • 2 Cups Chicken Stock
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 tsp Paprika
  • 2 Cups Half and Half

Directions:

  • Start by trimming the stem from the broccoli and cutting the florets into bite-sized pieces
  • Next grate the cheddar cheese and set aside in a bowl
  • Peel the carrot, cut of the ends and grate it, then set aside
  • Peel and dice the onion 
  • In a pan over medium-high heat add the butter followed by the onions
  • Use a garlic press to crush the garlic in the pan and stir until fragrant and translucent
  • Sprinkle in the flour and mix until fully combined
  • Next pour in the chicken stock, followed by the salt, pepper and paprika
  • Bring the soup to a boil, then add the carrots and broccoli, lower to a simmer and cover for 15 minutes
  • Remove the lid and slowly pour in the half and half while stirring
  • Finally, add the cheese and mix until melted and combined
  • Ladle into a bowl, serve and enjoy!
