  • 2 Cups Flour
  • 2 Tbsp Garlic Powder
  • 1 Tbsp Powdered Sugar
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Kosher Salt
  • 1 Tbsp Ground White Pepper
  • 2 tsp MSG
  • 2 Eggs
  • 1 Cup Whole Milk
  • 2-3 Quarts Neutral Oil (Vegetable, Canola, etc.)
  • 2 Tbsp Butter
  • 4 Brioche Buns
  • Pickles

Sauce

  • 1/3 Cup Mayonnaise
  • 1/4 Cup BBQ Sauce
  • 1 Tbsp Mustard
  • 1 Tbsp Honey
  • 1/2 Tbsp Lemon Juice

Directions:

  • Start by cutting off any excess fat on the chicken thighs
  • Then mix 3 tbsp kosher salt, 1 tbsp sugar and 2 tsp msg in a bowl and season every side of the chicken
  • Cover and store in the fridge for 30 minutes to an hour (Overnight is even better)
  • Next in a bowl mix the flour, garlic powder, powdered sugar, smoked paprika, 1 tbsp kosher salt, ground white pepper, and 2 tsp msg
  • In another bowl mix the eggs and milk until combined
  • Get out a tray to place the floured chicken and lightly flour the surface so the chicken doesn’t stick
  • Before breading, take 1-2 tbsp of egg wash, then drizzle and mix it into the flour mixture (this will help give the chicken extra crispy beads
  • To bread the chicken, simply dunk each thigh in the egg wash, then the flour mixture
  • Press down in the flour to coat every inch, then repeat this process, so each thigh should be dunked twice in the egg wash and twice in the flour mix
  • Place them on the tray and immediately bring the oil in a pot to 350 degrees Fahrenheit
  • Carefully lower the chicken in the oil in batches and fry for 3-5 minutes or until golden brown
  • Immediately place on a wire rack to cool for 5-10 minutes
  • To make the chick-fil-a sauce, simply mix the mayonnaise, bbq sauce, mustard, honey and lemon juice together in a bowl
  • To toast the buns, add 2 tbsp of butter to a pan over medium-high heat, and cook the buns face down for 2-3 minutes or until golden brown
  • If you want my recipe of brioche buns check the recipe I posted for that, as well as my homemade pickles recipe
  • To assemble the sandwich, start by lathering both buns in chick-fil-a sauce, then add the fried chicken, pickles, more sauce and close your sandwich
  • Serve with your favorite drink and waffle fries and enjoy!
