Finished with melted cheese, butter, crispy bacon, sour cream, and fresh chives, this recipe turns a simple potato into a hearty, comforting side dish that’s just as satisfying as the main course. Ingredients:
- 1 Russet Potato or 1 Sweet Potato
- 1/2 Tbsp Olive Oil
- 1/2 tsp Salt (Flaky Sea Salt works great)
- 2 Tbsp Butter
- 1/4 Cup Shredded Cheese
- 2 Tbsp Sour Cream
- 1 Piece of Bacon
- 1 Tbsp Chives
Directions:
- Start by washing and drying the potato then drizzle the oil over it and rub it in so all of the skin is covered
- Sprinkle the salt on the potato then bake in the oven at 400 degrees Fahrenheit for 45 minutes to an hour or until fork tender
- Cook the piece of bacon then cut or chop in little bits then set aside
- Remove the potatoes and let cool for 5 minutes
- Cut in half and place the butter in thin strips on the open-faced potato
- Sprinkle the cheese over the top and bake or broil in the oven until the cheese is melted and bubbly
- Remove and add sour cream followed by the bacon bits and chives
- Serve immediately and enjoy!
