French Fries

These homemade double-fried French fries are crispy on the outside, fluffy on the inside, and packed with the perfect golden crunch. By blanching the potatoes first, then frying them twice at different temperatures, these fries achieve the same restaurant-quality texture you love at home. Whether served alongside a burger, steak, or enjoyed on their own, these crispy homemade fries are the ultimate side dish. If you want more french fries than the recipe makes, just cut more potatoes.

Ingredients:

  • 1 Russet Potato 
  • 2 Tbsp Distilled White Vinegar
  • 1 Tbsp Salt
  • 1 tsp Baking Soda
  • 2-3 Quarts of Oil 
  • Salt for seasoning

Directions:

  • Start by peeling the potato
  • If you want to make french fries cut the edges of the potato to get a block shape, then cut the fries 1/4” to 1/2” thick
  • If you want to make waffle fries, you will need a crinkle-cut/wavy knife or a waffle fry cutter (a machine works best). Slice the potato while rotating it 90° after each cut to create the classic grid pattern that gives waffle fries their signature look
  • After cutting the potato immediately place the fries in a bowl with ice cold water and let them sit for at least 30 minutes or longer if you have the time (This is important for crispy fries, overnight is best but if you do that put it in the fridge)
  • Once the fries have been soaking for a while, dry them with paper towels or a clean kitchen towel
  • The fries need to be completely dry before blanching, any moisture will affect the crust
  • To blanch the fries simply bring a pot of water to a boil then lower it to a simmer
  • Add the vinegar, salt and baking soda, then cook the fries for 3-5 minutes to cook the inside a bit
  • Remove and dry well
  • Next is the first fry, an important step in getting a restaurant quality crust
  • Pour the oil in a clean pot and heat to 320 degrees Fahrenheit 
  • Cook the fries in batches for 2-4 minutes or until pale in color with a slight crust
  • Remove the fries, place on a tray and freeze for 4 hours
  • After 4 hours, heat the oil to 350 degrees Fahrenheit and cook the fries for 2-4 minutes or until golden brown
  • Remove and immediately season with salt and anything else you desire (I did rosemary)
  • Serve with your favorite sauce and enjoy!
