Ingredients:
- 1 Head of Butterhead Lettuce
- 2 Handfuls of Spinach
- 2 Cups Strawberries
- 1 1/2 Avocados
- 1/2 Small Red Onion
- 1/2 Cup Feta Cheese
- 1/3 Cup Sliced Roasted Almonds
- 1/4 Cup Pistachios
Dressing
- 3 Tbsp Balsamic Vinegar
- 1 1/2 Garlic Cloves
- 1/2 tsp Dijon Mustard
- 1 1/2 Tbsp Strawberry Jam
- 1/4 Cup Olive Oil
- Salt and Pepper to taste
Directions:
- Start by adding the balsamic vinegar to a bowl, grate the garlic cloves into the bowl and add the dijon mustard and strawberry jam
- Whisk everything together then slowly begin adding the olive oil while constantly whisking
- Continue whisking until the dressing and oil are fully combined, then chill in fridge until serving
- To make the salad, simply add the washed and dried leaves to a big bowl
- Then chop the strawberries so each piece is no longer than an inch, and add to the bowl along with the avocados and red onion sliced thin, followed by the feta cheese, sliced roasted almonds and crushed pistachios
- Mix well until everything is combined
- Plate and serve with the chilled dressing, enjoy!
