Ingredients (If you want more chips just double or triple the potatoes)
- 1 Russet Potato
- Kosher Salt
- 2 Quarts Neutral Oil
Directions:
- Start by peeling the potato, then use a mandolin to slice it very thin (you should be able to see light through it)
- Immediately place the chips in a bowl with cold water and generously salt the water to create a brine and let the chips sit for 15-20 minutes
- Dry the chips completely using a clean kitchen towel or paper towels (if the chips aren’t fully dry let them air dry for 30 more minutes)
- Heat the oil to 350 degrees Fahrenheit then fry the chips in batches for 2-3 minutes or until very lightly browned and crispy
- Remove and immediately salt the chips in a bowl and serve, enjoy!
