Ingredients:
- 2 Sweet Potatoes
- 2 Tbsp Olive Oil
- 2 tsp cinnamon
- 1 lb Beef
- 1 Tbsp Tomato Paste
- 2 tsp Taco Seasoning
- 1 Tbsp Water
- 1 Yellow Onion
- Salt and Pepper to taste
- 1 Cup – 1 1/2 Cups Cottage Cheese
- 2 Avocados
- 2 Tbsp Honey
Directions:
- Start by peeling and cubing the sweet potatoes into 1/2 inch or 1 inch cubes
- Drizzle the olive oil over the potatoes followed by the cinnamon and salt and pepper to taste
- Bake in the oven at 425 Fahrenheit for 30 minutes, be sure to flip them halfway through
- Next dump the meat into a pan over medium-high heat and use a spatula or meat chopper to break apart the meat, stirring occasionally until browned
- Add the tomato paste, taco seasoning and splash of water to the pan and mix well
- Next dice up the onion and add to the pan, mixing until well combined
- To serve, add 1/4 of the meat to a bowl or plate, 1/4 of the sweet potato, then half of an avocado sliced, and your desired amount of cottage cheese
- Finally heat up the honey to get it warm, and drizzle over the cottage cheese and the rest of the food
- Serve and enjoy!
