Homemade brioche buns are soft, buttery, and incredibly fluffy, making them the perfect foundation for burgers, sandwiches, and more. With their rich flavor, tender crumb, and beautiful golden-brown crust, these buns take any meal to the next level. While they require a little patience, the homemade result is well worth the effort.

Ingredients:
- 520 Grams Bread Flour
- 50 Grams Sugar
- 15 Grams Yeast (Or 7 Grams Instant Yeast) I used instant yeast
- 1 tsp Salt
- 250 ML Whole Milk
- 2 Eggs
- 75 Grams Softened Unsalted Butter
- 1 Egg
- 1/4 Cup Whole Milk
- 4 Tbsp Melted Butter
Directions:
- Start by heating 250 ml of milk in the microwave until it reaches 100 degrees Fahrenheit (Very important for the yeast) then mix in 15 grams of fresh yeast or one packet of instant yeast, then set aside for 5-10 minutes so the yeast can activate
- Next into a large bowl mix together the flour, sugar, salt, 2 eggs and the yeasty milk mixture until combined
- Once fully combined, use a stand mixer if you have one or use your hands and knead for 20 minutes (10-15 minutes if using a stand mixer)
- Then slowly add in the butter and continue kneading for an additional 15 minutes (5-10 with a stand mixer)
- Next get a bowl and grease with butter so the dough doesn’t stick, then place the dough in the bowl and cover with a damp towel or plastic wrap and let sit at room temp for at least one hour or until it doubles in size
- After doubled, flour a surface, remove the dough ball and use your hand to degas the dough
- Then divide into even pieces weighing about 3-3.5 oz each, and roll into a ball (See video if unsure) I ended up with 9 buns
- Place on a tray with parchment paper, flatten with a spatula and cover again for another hour
- Preheat your oven to 350 degrees Fahrenheit
- Mix together 1 egg and 1/4 cup of whole milk and brush onto buns just before baking
- Bake at 350 for 20-25 minutes making sure to rotate 180° halfway through
- After removing the buns from the oven, immediately brush with the melted butter
- Let cool for 10-15 minutes then set on a wire rack for another 20-30 minutes to reach room temp
- Cut open and enjoy!
