Ingredients:

  • 2 Eggs
  • 2 Tbsp Unsalted Butter
  • 1 Tbsp Creme Fraiche
  • 1 1/2 Tbsp Chives
  • Salt and Pepper to taste

Directions:

  • To start get a pan over medium heat and melt two tbsp of butter
  • Next crack the eggs in and whisk until the eggs are beaten
  • Use a spatula to constantly move the eggs and once they begin to cook up take the pan off the heat every 30 seconds so the eggs can cool for 30 seconds
  • The pan should be going on and off the burner until the eggs hold their shape
  • Then add in the creme fraiche to cool the eggs and continue mixing
  • Add in the chives and salt and pepper to taste
  • For Gordon Ramsay style scrambled eggs, pull of the heat while the eggs are still slightly liquidy
  • If you want them cooked more, keep the pan on the heat longer
