This Cheddar Apple Craisin Almond Salad is the perfect balance of sweet, savory, and crunchy. Crisp apples, sharp cheddar cheese, sweet dried cranberries, and crunchy almonds come together over fresh greens to create a salad that’s both refreshing and satisfying. Whether served as a side dish or a light meal, it’s packed with flavor and texture in every bite.

Ingredients:
- 1 Container Baby Spring Mix
- 1/2 Cup Honey Roasted Almonds
- 1/2 Cup Aged Cheddar or Sharp Cheddar
- 1 Cosmic Crisp Apple
- 1/3 Cup Craisins
- 1 1/2 Tbsp Apple Cider Vinegar
- 1 Tbsp Honey
- 1 tsp Dijon Mustard
- 1/2 tsp Lemon Juice
- 1/8 tsp Cinnamon
- 3 Tbsp Extra Virgin Olive Oil
- Salt and Pepper to taste
Directions:
- Start by washing and drying the leaves
- Next get out a pan over medium heat and toast the almonds for about 5 minutes
- Chop the cheese into little bits and set aside
- Chop the most of apple in 1/2 inch cubes and the remaining apple slice thin (see video)
- To start the dressing, get a bowl and whisk together the apple cider vinegar, honey, dijon, cinnamon, lemon juice and salt and pepper to taste
- Next, slowly pour in the olive oil as you constantly whisk together
- Put all your leaves into a large bowl and dress the salad using at least half of the dressing
- Then add the apple cubes, cheese bits, craisins and finally the toasted almonds
- Toss the salad until mixed and you’re ready to serve
- To plate, get one large scoop of salad and place it in a bunch, then use the thin apple slices to make a border around the salad for a nice presentation, enjoy!
